How do you make crockpot corned beef?

I bought a piece of pickled/corned beef (about 3 pounds), and it comes sealed in a bag with the spices and brine. (I've also done it with pickled turkey roasts for a lighter alternative.) I leave the bag sealed, put the beef in the crockpot, fill the pot with water and potatoes and leave it on low until lunch time Shabbos afternoon.
Well, actually that's how it's supposed to go. My crockpot's cord exploded in a shower of sparks at 6:30pm erev Shabbos, and DH ran to a nearby store to buy another one an hour before candlelighting. We couldn't toivel the new crock, so we put the old pot into the new heating element (the new one was about a finger's width wider in diameter, so there was a small gap, but the upper lip of the pot closed it off and we figured it would be insulated enough) and hoped for the best.
It didn't work out. At 6am I got up to change DS's diaper and checked on the meat. It was all completely RAW. It wasn't smelly or anything, so I figured I'd daven for it to somehow come to a nice, safe boil between 6 and noon, because I was having 4 guests + me and DH.
Nope. We had to throw out the meat, and went totally pareve for Shabbos lunch. B"H I made a lot of challah, salmon, salads and side dishes and my company was all college-age girls, so no one went hungry. And we could have milchigs for dessert!
