Make salsa or matbucha.

You could even freeze matbucha in small amounts and defrost as needed. My mom does this and I can't taste the difference.

You can make a marinara type of sauce for pasta from scartch
(I personally mix my tomatoes with heavy cream to make al vodka sauce)
A trick I learnt that if you boil water (Turn off fire) and place the tomtoes for just a min in the hot water the tomatoes just peel themselves making the sauce smooth and not full of peals.

Salsa

3 tomatoes, chopped
1/2 cup finely diced onion
2-5 serrano chiles, finely chopped (depending on how hot you like it)
1/2 cup chopped fresh cilantro
1 teaspoon salt
2 teaspoons lime juice
1 minced garlic clove

Mix everything and chill for at least an hour before serving.

I would peel the tomatoes like I said earlier and then dice them really small. I would put in pan with butter (oil if you do parve) crushed garlic, salt and pepper. Then I would simmer on a really low flame with a store bought marainara and some vodka. Add heavy cream and parmsean cheese and simmer if you want the vodka sauce.

I boil them just add salt plus 1 cup coked rice . blend with hand blender and eat or freeze for tomato soup!
no peeling.
for cheese sauce same as above plus 1 cup cheddar , It is SO good !!!!!! sprinkle with parsley to serve.

Roast with olive oil, italian seasoning ,sea salt and hand blend for a gourmet tasting freezable sauce. Very Happy

I was also gonna suggest greeneyes recipe. Its posted in the thread different vegetables.

Candied tomatoes!

Cut them in half, place them on a cookie sheet with parchment (without parchment paper it burns) cut side facing up. Drizzle with olive oil, sea salt and bake on 500 for about 2 hours. The edges should be blackened a bit by the time it's done.
