These are very good (the whole family ate them) while warm and fresh:
Quick and Easy Donut Holes
1 egg
1/2 C sugar
1 T oil
3/8 C buttermilk (can use pareve or regular and add a few drops lemon juice)
1 3/4 C gluten free flour (I used my own mix of 2 C white rice flour, 2/3 C potato starch and 1/3 C tapioca, then measured out 1 3/4 C)
1 3/4 tsp xanthan gum
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon
Beat egg and add sugar and oil and milk. Mix dry ingredients and add in. Fry in a skillet and drop by teaspoons as donut holes about 6 at a time and flip until browned. Don't fry too hot or they will burn before cooked through. While still warm, shake them in a paper bag with plain confectioner sugar or with added cinnamon.
For chocolate flavor - add 1/3 - 1/2 C cocoa to dry ingredients and increase milk 1/4-1/2 C.

Last year we made GF sfenj (beignet) using GF bread dough. They came out well, but these recipes look great.

Anyone have an awesome recipe for baked donuts? I have a hard time frying without burning and DH has been dropping hints that he misses donuts.
Alternatively, does anyone know how to make a boston creme/custard donut?
