I'm having lots of Sukkos company and wondering if I can make these eggplant dips today and freeze them:
1. I roast halved eggplants, scrape out of the peels, and mix with fried onions.
2. Same as above, but less healthy, I also mix in mayo.
Can #1 be made in advance and frozen? How about #2? I don't think I've ever frozen a recipe with uncooked mayo.

You certainly can Freeze the roasted egg plant with onions, I personally cube eggplant ( peeled) and fry it with onions and add garlic s/p, mash it and freeze it. It is the same thing it will work, just make sure you freeze it in airtight of ziplock, the latter is better coz you can try to take as much air out so it stays fresher.
DO NOT freeze mayo, add it after you defrost if you really want to.
