ISO eggplant in vinegar salad

I'm looking for a recipe for an eggplant salad that's sliced eggplants, marinated in vinegar and spices.

szechwan eggplant

3 med eggplant cut into I inc cubes
canola oil for frying
6 tabsp chopped garlic
5 tabsp suger
11/2 c. water
2 tabsp + 1 tsp viniger
1 tsp crushed red pepper flakes
drop of soy sauce

soak eggplant in water for 15 = 30 min rince and drain well
fry eggplant in 1/4 in oil for 12 to 15 min till soft
remove eggpant set aside
in I tsp oil add the garlic fry for a few min over low heat
combined sauce ing add to the pan bring to a boil.
return eggplant to pan cook for 5 min top with scalions if desiers. enjoy

you could if you want .but I dont like to cuz when I mix it all
the seeds get messy I like it cubed better.

do you serve this hot or cold?
also does it taste very sweet? can I reduce the sugar or will that ruin it?

I serve it cold. add 1/2 of the suger first taste it & adjust to your taste.I love sweet Very Happy

Marinated Eggplant

-1 eggplant, sliced and fried
-1/4 cup vinegar
-1/2 water
-2 tsp sugar
-1/4 tsp salt
-5 garlic cloves, crushed
-1/4 red pepper, finely diced

Combine vinegar, water, sugar, salt, garlic, and red pepper in a 2 lb. container. Cover and shake until combined.
Add fried eggplant slices. Give container 1 shake.
Let sit in refrigerator for a day before serving.
