Chocolate chips- do you make your own potato knishes? Im looking to make knishes like you get in the pizza shop, think 7" diameter round with a thin soft dough!

there are lots of great dairy and parve dishes on of joyofkosher.com, they also have several menu ideas for the 9 days.

as for the eggplant parmesan without fried eggplant, mix a few tablespoons of oil in with 2 eggs, dip the eggplant in this and then breadcrumbs, put on a baking sheet lined with baking paper and bake for 20-30 minutes. or dip in plain egg and breadcrumbs and spray with cooking spray. you can also just spray the plain eggplant slices with cooking spray, season salt, pepper, garlic powder, and italian seasoning and bake for 20 minutes. either way, when cook enough to handle use in place of fried eggplant.

My kids give me a hard time when I serve dairy for supper. If it's simple (eggs on bagels), they claim it's a breakfast and if it's a bit more complicated (baked ziti) they claim it's a lunch. I'm so sick of hearing it already. I mostly serve now diff. dishes made out of gefilte fish mix. I defrost the loaf, and make balls out of it in tom. sauce (mock meatballs) with spaghetti. I use the same mix for fried patties and mashed potatoes on the side. I baked the loaves in tomato sauce with peas, carrots, etc. and vegetables to be like a meat loaf. I'm running out of ideas here, I can't wait till the nine days are over.

my kids would eat milchig 365 days a year if they were in charge. they don't get cooked lunch and breakfast anyway so for them cereal is breakfast and sandwiches are lunch.

what about veggie dogs, shnitzle and burgers? A staple in israeli and european homes.
make more sophisticated eggs like frittata, shakshuka, or a filled omelette.

do your future dils a favour and broaden your kids palates.

cookkosher.com has a whole section devoted just to recipes for the 9 days. I've gotten some of my all time fave recipes from there, so it's my go to place for the 9 days as well.

How do you know our menus do not consist of easy quick recipes? Wink
You can make oven to table no boil ziti, lasagna, manicotti, etc. No boiling noodles first.

EMmom: Thanks! I made the soup tonight and my husband loved it! it's a good thing because I tried making my own spinach calzone, and that was a flop. But at least he was full from the soup and a fresh salad!

Oh my... I'm feeling very inadequate now. I served mac and cheese last night, along with a vegi mix. Don't have anything on plan for tonight. Will probably take frozen pizza out for the kids, and then once they're asleep I'll go out shopping to be able to make something decent for dh and myself (as well as for the next few nights).
I'm trying to make myself feel better with the excuses that I live very oot (closest kosher store/restaurant 25 min away) and work full time... but gosh, reading about all you amazing housewives with gourmet dinners every night is kinda demoralizing. Oh well, as long as dh never finds out what "real" wives do, I'm ok.

:-) same here. I never cook fancy and on the 9 days I keep it extra simple. today we had squash soup with shredded cheese. and fish n potato

I usually just do my own thing by combining marinara, water, various cheeses, etc.
Google no boil baked ziti. There are some great recipes out there.

I plan on baked salmon, roasted potatoes and cauliflower, lentil burgers, lasagna, tofu stir fry ,soups and salads homemade pizza

Very easy and not so fattening:
Layer in a 8x8 pan (or double in a 9x13 pan)
cornflake crumbs or bread crumbs or matzah meal
peeled eggplant sliced thinly
cornflake crumbs or...
pizza sauce
shredded cheese.
repeat until all the eggplant is used up (about 3 layers).
Finish with eggplant covered in cornflake crumbs.
Bake tightly covered for 1 1/4 hours.
Uncover and pour ontop
8 oz. tomato sacue
2 tbsp. oil
1/3 cup sugar
mixed together.

Bake 15 minutes uncovered at 400.

Thanks, I made this last night for supper.
And, it was delicious!!

Lilkingdom can u pls post recipe for pizza roll

Pizza Dough:

1 Tbsp dry yeast
2 cups lukewarm water
2 tsp sugar
3 tsp salt
2 Tbsp oil
6 cups flour

Dissolve yeast and sugar in the water. Add remaining ing and kneed to form a dough. Allow to rise for about an hour or two. Split dough in 2 (recipe is for 2 pizza rolls)

Roll dough in big rectangle (not too thin, itll crack in the oven). Evenly spread a nice amount of tomato sauce onto rolled out dough. Sprinkle grated mozzerella and munster cheese on top. overlap about an ince of the dough both sides of rectangle length. (will prevent sauce and cheese from leaking out of the dough). roll dough to form the pizza roll. Bake on 350 covered for 45 min. uncover, beat an egg, shmear on top and add sesame seeds. Bake another 15 min uncovered until golden brown on top. Allow to cool 5 min before cutting slices. you can add any kind of topping as well.

my tomato sauce recipe:

1 can tomato sauce
1 can tomato juice
crushed garlic
black pepper
pizza spice or italian spice

Enjoy! It looks really pretty as well.

I made this and it was really delicious (I used marinara sauce instead of the tomato sauce) but the roll spread all over the pan! How do you get it to stay in shape?
