btw, worldpeace, kah at one point I had 2 under 11 months and then 3 under 22 months. So yes, I know that it's hard to be fancy - imo, no need for it as long as the food is good and healthy! Every single thing on my menu is super easy and quick and does not require a lot of time standing around in the kitchen. If you ever need more ideas, feel free to ask b/c I have tons! Wink

Sure - the quinoa is real easy. You just do the regular water to quinoa amounts and add a little chicken soup mix during the boiling. When it is all finished, add some shredded cheese and just mix well. It is SO good. When I have more time, I usually saute an onion, some garlic and fresh mushrooms first in butter and then toast the quinoa before boiling.

The cheesy baked beans are posted here somewhere - I kind of made up the amounts, so bear with me as I try to "repeat" it: Smile

1 can baked beans or white beans in tomato sauce
1 small can corn
1 large onion
a few cloves of garlic
3 tomatoes
(1/2 c. salsa - optional)
1 c. shredded cheese
1/2 c. milk
salt, pepper, garlic powder, chili powder to taste

Saute the onion, garlic, and mushrooms in oil, add the tomatoes and let simmer for about 5 minutes. Add the beans and corn and cook until slightly thickened - abt 15 minutes. Then add the cheese and milk and spices and turn off the flame. Stir until cheese is melted.

I often serve this with taco chips as a dip. It's REALLY yum!

I forgot about the bruschetta, sorry!

The basic idea is to take a french bread and slice it into 1/2" rounds. I lightly toast them - reeeeally light - and then add a mixture of chopped tomatoes, onions (or scallions), garlic powder and salt and then sprinkle cheese all over. Bake in the oven until cheese is bubbly.
