I'm thinking of something along these lines (not in any particular order, and I might still change my menu):
1. eating out
2. rich mac n cheese, Greek salad, creamy tomato soup
3. cream sauce salmon, french onion soup, Greek couscous salad
4. lasagna verde, avocado salad, mango soup
5. Greek spinach pizza, balsamic vinaigrette salad, mushroom barley soup
before fast: cheese lokshen kugel, cheese latkes, breaded fish fillets, pasta salad, bread, watermelon, Powderade
after fast: orange juice, chocolate cake, seared tilapia, mushroom barley soup, vegetable salad
What are your plans?

As I say each year, I don't think the nine days are a time for exotic, exciting, gourmet foods. I try to keep everything low-key. For this year, I have the following in mind:
pizza with veggie toppings
grilled tofu and/or tofu jambalaya
tuna patties
baked salmon
spaghetti with grated cheese or lasagne
side dishes: potato bourekas, french fries, spätzli - all from the freezer. Mashed potatoes, instant couscous, rice
veggies: creamed spinach, zucchini, lecso
pre-fast: lukshen-cheese kugel, maybe soup, lots of fresh bread, watermelon and grapes
post-fast: soup, omelettes, lox on fresh bread

my menu will be similar to sarahds. Basicall the same milchig or pareve dishes that I make all year round. grilled salmon, mac and cheese or other pasta dishes, tuna patties, frittata, lentil shepherds pie, etc. and not to forget my families favourite meal. I think they like it better then steak - sunny eggs and chips.

french bread pizzas with yummy toppings like olives and onions and peppers
bean burritos with spanish rice
french toast/eggs
Country bread with nice cheeses and salad
Toasts with mozzarella, basil and sundried tomatoes
Minestrone soup and cornbread
I actually look forward to the 9 days in a way because I love milchig food!

Wend: Tangy Tilapia, stir fry veggies, brown rice
Thurs: Salad, Eggplant Parm (easiest recipe, not fried) - our standard Thurs supper
Sunday: Falafel and Pitz, Salad
Monday: Butternut Squash Soup, Eggplant pizza (not fried), salad
Tuesday: Butternut Squash Soup, Maccaroni and Cheese, Salad (maybe tuna patties)
Wends: Salmon, Brown rice, Powerade, Salad

Cream Sauce Salmon
Ingredients
• 1 lb. salmon filets
• 1/2 cup water
• 1/2 cup vinegar
• 1 cup lemon juice
• 2 Tbsp salt
• 2 cups sugar
• 1 onion
• 4 Tbsp mayonnaise
• 4 bay leaves
• 1 Tbsp pickling spice
Preparation
Combine the vinegar, lemon juice, salt and sugar.
Divide mixture in half.
Add 1/4 cup water to each half.
Place fish in a large pot with half of the mixture. Heat the pot to boiling. Cook fish in covered pot for 11-12 minutes.
Pour out the seasoned water.
Add the mayonnaise to the other half of the mixture. Mix well with hand blender.
Layer sliced onion on bottom of fish container. Place cooked salmon on top. Pour the rest of the mixture containing the mayonnaise over the fish.
Place bay leaves and pickling spice in a cheese cloth. Add the cheese cloth to the container, making sure it it covered in sauce.
Cover and refrigerate for a day or two before serving cold.
French Onion Soup
Ingredients
• 4 large onions, sliced
• 4 Tbsp butter
• 1 cup dry white wine
• 2 Tbsp flour
• 8 cups water
• more salt to taste, or 3 Tbsp onion soup mix
• 1 tsp salt
• ½ tsp black pepper
Preparation
In a 4-quart stockpot, sauté onions in butter over medium heat for about 8 minutes, or until caramelized to a nice golden brown, stirring frequently so they don’t burn.
Add wine and continue to sauté for 2 to 3 minutes.
Slowly stir in flour.
Stirring to keep lumps from forming, add water, onion soup mix, salt and pepper; bring to a boil over high heat.
Reduce heat to low, cover and simmer for 1 hour and 30 minutes.
Ladle into bowls.
Either top the with a piece or French bread that has been toasted cheese until bubbly.
Or just sprinkle with a lot of cheese, which will melt immediately.
Greek Couscous Salad
Ingredients:
• 1 (10 oz.) package couscous
• ¼ teaspoon black pepper
• 2 tablespoons lemon juice
• 3 tablespoons olive oil
• 2 large tomatoes, chopped
• 1 medium zucchini, halved and thinly sliced
• ½ cup fresh basil, cut into strips
• 1/3 cup scallions, sliced
• ¾ cup crumbled feta cheese
Preparation:
Prepare couscous according to package directions, except omit butter or olive oil and add black pepper with water.
In large bowl, combine prepared couscous, lemon juice and olive oil. Add tomatoes, zucchini, basil and scallions. Chill 4 hours or overnight.
Stir in cheese just before serving.
(I've made a Parve version of this once and it was great too. I've also made this numerous amounts of times with dried basil.)

My mother-in-law just told me about a Shiur she just heard. The Rabbi said that it's okay to make fancy Milchig dishes, as the point of the Milchig is the lack of Korbanos = Fleishing, and not because we are in mourning.

we stumble along, lots of salads
I find the 9 days to be challenging NOT b/c of milchigs, but because all the kids are home, and need lunch and dinner. we do a lot of pasta

Tonight were having chilled salmon with dijon dipping sauce. (Quick & Kosher)
Thurs- eggplant parmesan
Sun- going out for pizza
Mon- broccoli or spinach quiche (Spice & Spirit)
Tues- Sweet & Sour Tilapia (recipe posted on here- search it) scalloped potatoes (spice & spirit)
Wed- Im not sure yet, something filling and not salty for before the fast

I make eggplant parmigian and don't fry, I slice the eggplant very thin, dip it into eggs, then flavored breadcrumbs. I spray a cookie sheet and lay the eggplant down. I put it on broil, for 10 minutes on each side. It's yum
