Dh always peels and cuts the vegetables for the soup on Thursday night. He puts them in the pot with water in the fridge overnight and I just spice it and cook it in the morning.

I think you are not supposed to leave onions cut overnight (kabbala)

That is true, but I always figured if it's in the pot with the water and everything else, it's no different from refrigerating tuna fish with onions mixed into it. I may be wrong though.

I do it all the time! especially when I have alot of food to make - like marinating chicken, soups, side dishes with rubs and marinades.
I do it with soup and vegetable dishes -
I like to "prep" them the night b4 so easy into the oven or onto the stove top the next day!
I just did it last night for my cucumber salad - cut up the cucumbers and onions - put into the container and into the fridge - but will put the dressing on it later today bc I dont like it when it becomes too soggy.

I do that every week!
I like all the "hot foods" to be fresh, yet I don't want to leave everything for friday.
Peel vegetables put into pot with the chicken - into the fridge
Chicken, raw, marinated, the way we like it - in the fridge
Noodle kugel, all ingredients mixed - in fridge
Chulent is the only thing I make thursday, cause I do it in the crockpot and it stays on till its time to eat it!
Come friday morning: put the fire on under the soup, chicken and kugel into the oven, and we're ready for shabbos, with fresh food! Smile Smile
