This is a great recipe. We ate a friend for shabbos a few weeks ago and she made this salmon. Loved it. Im having guests this week so im gonna make it again. I igured I'd share it!
1 big red pepper
3 carrots
1 regular size onion
a small bunch of cilantro (fresh)
2 cloves of garlic
2 long hot green pepper
take the salmon and soak it in lemon juice.
cut the carrots in strips and red pepper in quarters and onions into small cubes
sauté (with a nice amount of oil) the onions, red pepper and carrots and long red hot pepper. once is soft add the cilantro (chop it) and the 2 cloves of garlic (that leave whole) and then add paprika, salt, garlic powder, and a drop of crushed red pepper (optional).
wash the salmon from the lemon juice and sprinkle with salt and garlic then put it in the pan of sautéed vegetables and put the vegetables on top of fish and cook it covered for abut 30-45 min. (don't add water when you cover it the fish it self makes water) you can base the fish with the oil every so often.

Just to let you know, I made this thios week and it was SO good!
I used Costco salmon (huge pieces) and we all ate our whole piece!
Very very good. It can be used as a supper on weekday too.
