ISO CRISPY salmon recipe

Hi, I'm looking for a new salmon idea. I was thinking maybe like a honey dijon sauce with a crispy coating on the salmon like panko breadcrumbs? Anyone have any exact recipes for some good salmon recipes that are not too sweet. I usually make asain/teriyaki style so I'm looking for something different.

I don't have the recipe on hand but there is a honey-dijon salmon with Panko breadcrumbs exactly like you describe in the KBD Entertains. It's soooo good!

I don't know about the one in KBD but I made this one and it's very good:
Baked Dijon Salmon
I omitted the butter and sprayed the the top of the salmon with cooking spray.

I"m not looking at it now but I think the At Home Gormet cookbook has a recipe for salmon with crunchy crushed chips on top (or something like that0

I made this tonight. I also left out the butter but used about 1/2 tsp canola oil instead. Not sure if it needed it. Also sprayed the pain and the top with canola spray.

would give it 5 stars for anyone looking for a new recipe. Just FYI!

Baked dijon mustard salmon

1/4 cup butter, melted (omit and use pam)

3 tablespoons Dijon mustard

1 1/2 tablespoons honey

1/4 cup dry bread crumbs

1/4 cup finely chopped pecans

4 teaspoons chopped fresh parsley

4 (4 ounce) fillets salmon

salt and pepper to taste

1 lemon, for garnish

Directions

Preheat oven to 400 degrees F (200 degrees C).
In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.

I have made a similar (and simpler) version of this which is also very good.

Just spread mayonnaise (not low fat one) on the salmon fillet. Season (pepper & dill?). Then pat on a layer of ground/chopped almonds/pistachios/any nuts you have around. Bake.

Yum.
