So weird my response isn't showing. . .
I bake it covered for most of the time, and then uncovered for around 20 mins so the onions get crispy.

thank you. I made it for shabbos and it came out great. you are right-it will probably be good in mini pie shells.

I haven't been around for a while and haven't read this thread for even longer so thanks for some nice new ideas which I look forward to trying.
I'm having company this week so there will be 16 of us for Friday night and just 4 of us for lunch -
Friday night -

Lahme Be'ajin (a Lebanese side)

Can I make this with fresh mushrooms? Do I just sautee them longer with the onions? Looks really yum.

Ok, haven't been to the grocery store in 3.5 weeks, and don't have plans on going shopping for another week and a half. All produce is either from 3.5 weeks ago or was foraged, aka things picked that were growing wild. And I must say, I don't think my Shabbos menu looks lacking at all!
Homemade whole wheat rolls
chilbeh
fennel salad
Sweet and sour carrot salad
Possibly sfardic beet salad
maybe broccoli raab and pine nut pesto (if I have the koach to get all those pine nuts out of the cones)
Potato mallow soup (based on this recipe for melokhia, the popular egyptian dish)
vegan lasagna (with homemade lasagna noodles, and mock meat filling made from seitan and red lentils, and with broccoli raab
wild fennel and seitan stuffed chicken breast
Spice cake for desert
Chilled fennel tea to drink (made from the wild fennel)

Made a delicious chicken.
My chicken normally is, but this recipe really worked for my crew:
Chicken done the Moroccan way...Saw a recipe online, forget where; rub the chicken with oil and paprika, cook in covered pot on top of the stove in own juices till done, add veggies of various sorts and water.
I used fennel, onions, peas and carrots..next week I'm going to do some different veggies as well as golden rasins, and maybe skin the chicken first and use the skin and back for soup.
I'll also make more rice.
Yum.
One pot Shabbat meal!

DOUGHLESS POTATO KNISH
3 Lbs potatoes (cooked & mashed)
3 eggs
1 cups flour
2 onions diced and sauteed in lots of oil
1 tbsp. salt
Black Pepper
Combine all ingredients, Pour in 2 9" round, Brush egg and sprinkle sesame seeds.
Bake at 350 for 45min to 1 hr

my reply is gonna make everyone feel good about themselves. I had the flu all week, and I'm still out of it.
I don't even have the energy to go to the grocery store, nor did I plan or cook yet.
I'm really not sure how I'll get food on the table this week. I'll probably see what I can pull out of the freezer..
at times like these I wish I lived near family.

Rovacat: I can really sympathize with you. It is so hard being away from family especially when you are sick. I wish you a speedy refuah shelama.

don't be intimidated by the number of steps. take it slow and it works. All the rest of my menu came from the site as well
