does anyone know a home-made salsa recipe preferably that can last in the refrigerator.

Homemade stuff does't have preservatives. This m ight be a Catch-22 for you.

in our house it would get eaten real quick.

I make a pico de gallo, which is a 'drier' version.

Diced tomatoes, diced onions, minced hot pepper, chopped cilantro, minced garlic, black pepper, salt, lemon juice and a tiny bit of oil.

Do you cook it at all? Or just toss those ingredients?

freshie, if you make your salsa from canned tomatoes (ie. cooked), it can last in the refrigerator for 2-3 weeks.
Do you need me to try to find a good recipe for you?

recipe:
2 15oz cans diced tomatoes
1/2 onion, chopped
2 jalapenos, chopped (adjust according to level of sephardiness)
4 cloves minced garlic
3 tbsp finely chopped green pepper
1 1/2 tsp basil
1/2 tsp chili powder
1/2 tsp salt
1/8 tsp pepper

Mix together. Don't fall off your chair. it's really good. (Tastes like from a jar, I love it.) Yields about 4 cups.

Thanks! I was looking for one with pepper. Perfect! How long can it last in the refrigerator?

Can this be frozen in serving size containers?

I'm trying to eliminate sugar from my diet and can't find a sugar/sweetener free salsa in stores
