chicken kebabs (schwarma chicken kebabs with vegetables)
*1-1/2 lbs. dark chicken cutlets, cut into large bite sized pieces (chicken bottoms with no bones or skin)
*4 Tbsp oil (can use 2 Tbsp oil and 1 Tbsp lemon juice)
*4 cloves garlic, crushed
*1 Tbsp sugar or sweetener equivalent
*1 tsp curry powder
*1/2 tsp cumin
*1/2 tsp coriander

*coarse salt for sprinkling

*mushrooms, grape tomatoes, chunks of red onion

*wooden skewers

Marinate chicken pieces in a bag with oil, garlic, sugar, curry, cumin and coriander for 2 hours or overnight.
Thread chicken and vegetables onto skewers, alternating with one piece of chicken and 1 vegetable piece.
Sprinkle with coarse salt.
Arrange on cookie sheet sized baking pan. Bake uncovered at 425 for 25 minutes.

Monday: crispy garlic chicken (boneless), creamy mashed potatoes, vegetable soup
Tuesday: sweet and sour meatballs (vegetable filler), steamed rice, cauliflower popcorn

ra_mom, when are you inviting me to dinner? Seriously? How do you do it? It's not just the healthy, well balanced meals, it's the creativity to come up with them. Supper for me is something easy like meatballs and spaghetti or hamburgers and potatoes, or chicken cutlets with rice. Sometimes I patchke a bit more but it's usually not for the healthier I.e. potato knishes with mushrooms sauce or eggplant parm (which is baked).

This week is going to be very hectic so: Sunday: baked eggplant parm (if I get out to buy the eggplant, I have everything else) with maybe a salad.
monday: from outside
tuesday: some sort of chicken stirfry with veggies and pasta
Wednesday: hamburgers and homemade fries
thursday: Shabbos food.

My food is very simple to make. As long as I prepare the stuff ahead of time raw and frozen (makes it easier if it's the week before), it's not hard. (Think shredded carrots in the freezer, raw formed meatballs, chicken cutlets already thinned and/or cut into stir fry pieces.)
Your menu sounds yum btw. I would totally make those stuff too!

portobello mushroom caps and/or round eggplant slices (not thick)
Italian dressing (fat free)
marinara sauce
oregano and garlic powder, optional
shredded cheese

Place mushroom caps or eggplant slices in a bowl. Pour Italian dressing over them. Allow to marinate.
Spoon marinara sauce over veggie rounds. Sprinkle with shredded cheese (and optional spices).
Bake uncovered at 375 for 25 minutes or until cheese is bubbly.

Crispy Garlic Chicken

1-1/2 lbs. dark chicken cutlets (boneless and skinless chicken legs)
1-2 Tbsp olive oil
5 garlic cloves, crushed
3/4 tsp salt
2/3 cup corn flake crumbs

Cut chicken cutlets in half. Place in a Ziploc bag together with olive oil, garlic and salt. Zip closed and massage chicken until chicken is covered evenly in marinade.
Marinate for 24 hours.
Coat each piece of chicken in cornflake crumbs. Arrange on cookie sheet sized pan. Bake uncovered in oven preheated to 400 for 20-25 minutes.

For the sweet and sour meatballs, I used 1-1/2 cups of tightly packed finely grated butternut squash instead of 3/4 cup bread crumbs.

Sweet and Sour Meatballs

1-1/2 lbs. ground meat
3/4 cup bread crumbs
1 egg + 1 egg white
1/4 cup grated onion
2 cloves garlic, crushed
3/4 tsp salt

1 (28 oz.) jar marinara sauce
1 (15 oz.) can jellied cranberry sauce

Combine meat ingredients and form into meatballs. (I do this ahead of time and either place them in a pan in the fridge or freezer.)
Combine marinara sauce and cranberry sauce in crockpot, mixing well to combine. (I use a crockpot bag liner, with water underneath the bag, for easy clean up and softer meatballs.)
Add meatballs.
Cover and cook on LOW for about 8 hours.

ra_mom, would you mind posting these recipes when you have a chance? And thanks so much for all the other recipes you have shared! I just copied down a bunch of them and cant wait to make them. For the beef stew, can you tell me specifically which meat you use? Or what the trick is to getting the meat to be melt-in-your mouth soft? I've tried stews so many times, and havent gotten it quite rght yet.

Sure!

Basil Chicken & Pasta
- 1.5 lbs. dark chicken cutlets (boneless skinless chicken legs), cut into bite sized pieces
- olive oil
- 6-12 cubes frozen basil
- 4-6 cubes frozen garlic
- salt to taste
- 1/2 pkg. pasta, cooked and rinsed according to pkg directions

Heat olive oil in large pan or pot. Add chicken pieces, basil cubes and garlic cubes. Cook until done.
Season with salt to taste (enough for pasta as well.)
Add pasta and toss, making sure pan juices and seasonings coat pasta and chicken well.

This is delicious, just make sure to use dark cutlets.

About the beef stew, the trick is that it's cooked in the crockpot for about 9 hours on low. Any cheap cut of meat will do if you are using the crockpot.

Sunday: ordered pizza
Monday: leftover Shabbos chicken for DH, don't know what DS and I will eat!
Tuesday: low cal penne a la vodka, salad
Wednesday: beef goulash with baby onions and potatoes, garlicky green beans
Thursday: tuna patties/pie, leek and potato soup

I actually started a new menu plan. DH was not happy I was making only milky or parve meals, so we agreed 2 meaty, 2 milky, and 1 parve meal per week.
Sunday: milky
Monday: meaty in the oven
Tuesday: milky on stovetop (because I bake for Shabbos on Wednesday)
Wednesday: meaty on stovetop
Thursday: parve

Does the eggplant really get fully cooked? Whenever I try to do something like that with eggplant it comes out bitter.

It does.
The eggplant slices need to be thin. That's the key.
And they are marinated before being assembled for pizza.

Sunday: gnocchi with creamy pesto
monday: black bean soup and sunflower salad
tuesday: mushroom quiche and greek salad
wednesday: pasta salad and potato/egg salad (these are salads with a lot of stuff in them so really more main dish like)
thursday: crepes (spinach fro main, nutella for dessert)

I make the soup in a big pareve pot at the beginning of the week so it can go with all the meals if desired.
