Help with overcooked dried out salmon

I followed a recipe from Binah magazine that I think had a typo. It had me cooking this salmon at 425 degrees for 25 min covered and then for another hour uncovered- with no change in temp. My salmon is now very overcooked and kind of brittle inside. It tastes good, but it won't look nice when I cut it into pieces. Does anyone have any recipes that use cooked salmon that I could use to make an appetizer (pref. without puff pastry)

Or serve with lot of sour cream/chopped pickle tartar sauce...

chip it up, mix with bread crumbs/egg/mayo/dill, fry as salmon cakes.
serve with lemon squeezed...

You could make a salmon salad (like chicken salad). When I have salmon leftovers, I mix up mayonnaise, curry powder, peas and carrots (pre cooked) and shallots or onions (finely chopped) and put it in puff pastry (this is one of the few times I use it) or homemade bureka dough (equal amounts olive oil and water, small amount of salt, then mix in flour until the dough is soft like your ear lobe, then rest for 15-30 minutes). Bake for 15-20 minutes or until golden brown. You can egg the dough to make it shiny and pretty.

It would definitely be good in salmon salad - I would allow it to sit in the dressing for a bit as I assume it is fairly dry.
Alternatively, you could make salmon pate - blend together salmon, smoked salmon, lemon juice and butter (or marg or mayo). If you want an exact recipe I'll find it for you......it's really good spread on challah/crackers.
You could also use to make salmon patties - mix with mashed potato, fried onions (or spring onions), seasoning and fry.

I bake salmon patties - and they're really good. To about 1 lb. salmon add 2 mashed potatoes, browned onions, 1 egg, 2 tsp. mustard, lemon juice, chopped parsley, salt and pepper, 1/4 cup breadcrumbs.
Form balls, roll in a mixture of wheat germ and sesame seeds, put in baking pan and flatten with fork.
Bake 10 minutes on each side.

Is the recipe that you made the oven baked sweet and sour salmon recipe?
I also wanted to try it, but I am used to baking my fish for 13-25 minutes, and thought the amount of baking time sounded off.
Thanks for your post. I guess I will try it for just 25 minutes, and will decide whether to cover it or uncover it.

Omg! I made that recipe for shabbos and the same thing happened to me Sad. It was too late to recook so we had dried out salmon....

The entire cooking time should have been 25 minutes, tops. Salmon cooks very fast. I can't imagine that this would have tasted good even in a salad or with tartar sauce. It becomes chewy and yuck when overcooked.

lower the temperature for those of you who are trying again ... & 1 1/2 hours is way too long to bake a salmon - even for me [who likes things well done]
