2.5-3 kg shoulder of lamb
1/4 cup olive oil ( I use much less)
1 onion
1 ts garlic crushed
1 TB brown suger
1/2 cup lemon juice
2 TB fresh parsley
6 long sprigs rosemary
1 tb fresh mint
1 tsp ground pepper
Salt to taste
The recipe doesn't say to do this, but I do it anyway and I find it much tastier but I guess if you don't have time/or a food processor than you can skip this step. I blend above ingredients and make a paste.
Rub the paste into the lamb on all sides, marinade overnight (or for a few hours)
Cook @ 180 Celsius (not sure in Fahrenheit) for 70 minutes.
Uncover for 60 minutes turning every so often, when brown reduce heat to 160 and roast another 30-45 minutes, can be covered if it is brown enough.

Popped Rice is basically frying the rice till it pops. You take regular white rice, heat oil in a pan till hot, and fry the rice. You can tell it is ready when it gets white and sort of pops. It kind of looks like rice crispies. It takes very quickly and you need to stir it the whole time and make sure it doesn't burn.
The salad is as follows:
Iceberg lettuce
Cucumbers
Purple onion
Avo
Popped Rice
Dressing:
1/2 Cup Mayo
1/2 Cup Oil
1/4 cup vinegar
1 tsp Salt
4 TB Sugar
It's delicious and yummy with a nice crunch.

I'm guessing you dip the chicken in a mixture if ketchup and mayo, then bread crumbs, then fry. Is that right? Any egg? Sounds great!

I'm not too excited to prepare for Shabbos with all the pre yomtov prep going on, but we have to eat, so I'm trying to make food that's very different than the Rosh Hashana food.
Including:
Salsa Pineapple fish
Shake and bake style chicken
Pumpkin Pie, if I have any canned pumpkin at home, that is
Cholent, since I'm not making that next week

Friday nite:

sweet noodle kugel

Shabbat lunch:
gefilte fish (maybe)
cholent
nish nosh salad
cucumber salad
leftovers from Friday nite
mousse pie
watermelon

I don't have an exact recipe I sort of make it up but here goes.
Cook one package penne (or any other pasta or more pasta or whatever )
Wash and cut up an assortment of
-zucchini
-red onion
-peppers
-mushrooms
-butternut
-squash
or whatever roasting veggies you have in your house
put in roasting pan
with one container or cherry or grape tomatoes
sprinkle with salt, freshly ground pepper, and olive oil
Roast in the oven till nice and and roasted. I have no idea how long this takes.
Mix roasted veggies, pasta, and one package of sundried tomatoes+ the oil it is marinated in together.
If necessary add a little more olive oil
then add
Balsamic Vinegar
and a bit more salt and pepper
All of this can be done way before serving
Right before serving add freshly chopped basil
It's YUM!
