Im looking for a recipe for sole filets - for those of you in the states, its like flounder maybe a drop thicker... anything good?

what kind of sole fillets do you get? If it' Dover Sole (thicker, more expensive ones with bones left in), just dust the fillets with seasoned flour, pan-fry with a bit of olive oil (or butter if you eat fish/dairy combo), squeeze lemon juice.

You can do the same with lemon sole (more popular esp frozen, thinner/smaller fillets), I like making a "bundle" with mashed potato (instant will do) or julienned veggie stuffing, pour a few tablespoonful of tomato sauce, maybe a splash of white wine (optional) and bake in the oven. Don't overcook otherwise they get dry--broiling works better. You can also coat with beaten egg/breadcrumbs and pan fry.

Bumping this up - I have two bags of sole fillets (plaice) sitting on my kitchen counter for lunch. The recipe on the packet has wine in it, so no help...

Just made sole for lunch (they were on special offer last week)

I put the defrosted fish on a piece of slightly oiled silver foil, to cover the broiling pan. Then brushed them with a mixture of garlic, coriander (cillantro), pepper and oil.

Grilled (broiled) under a pre-heated broiler for about 8 minutes. Delicious!

Id like to make sole filet for dinner tonight. Any ideas on how to get rid of the fishy aftertaste? I dont mind it but my kids def . do! I would like to marinate the fish in ketchup, olive oil and crushed garlic. any other tried and true ideas? thanks in advance.

I have a great crispy batter recipe for frying or baking. I don't find the fish to taste fishy with this.

Here it is for next time:

Crispy Batter
• 1 cup sifted corn starch
• ½ cup sifted flour
• ½ tsp salt
• 2 eggs, mixed with
• ½ cup water

Yes. It's very good for frying. For baking, use a decent amount of oil in the pan. (Maybe preheat the oil in the baking pan beforehand? I cannot remember. SV, can you help me out here? Smile )

FYI, this recipe is for 2 pkg of fish. So if you are only using 1 pkg, you can halve the recipe. (1/2 cup sifted corn starch, 1/4 cup sifted flour, 1/4 tsp salt (or more to taste), 1 egg mixed wiith 1/4 cup water.)

Honestly, I've only used it for frying, so I can't help you with baking directions Smile.
And I agree that this recipe is good for about 2lbs.

Ok, I asked avigail. Preheat the oil in the oven in a baking pan, then take the pan out of the oven, place the battered fish or eggplant into the sizzling oil, and bake. Turn over three quarters through.
