anyone have a recipe for deli roll but with shnitzel instead of dough?

chicken roll ups
1.5 lbs. chicken breasts, thinned and cut into long pieces (about 8 pcs.)
pastrami (as many slices as chicken pieces)
mustard, optional
mayonnaise
corn flake crumbs
duck sauce
Smear each piece of chicken with just a tiny bit of mustard. (Optional)
Place pastrami on chicken piece. Roll up. Secure with toothpick.
Dip rolled chicken in mayo.
Roll in corn flake crumbs.
Place in baking pan.
Drizzle with just a drop of duck sauce.
Bake uncovered in oven preheated to 350 for 30 minutes.
Serve with duck sauce on the side, as a dipping sauce.

I do the same as this but instead of breading the rollups I dip into a mixture of oil and spices and the add duck sauce when half baked, I also do this with capons so bake covered first for an hour then open add duck sauce and bake additional half hour.
