Great question. Thanks for bringing it up.
I'm mostly looking for lettuce salad dressings, but if anyone has dressings for simple veggie salads that I could make during the week (heavy on the "simple"), that would be great too. Thanks!

for simple delicious salad dressings use:
1 Tbsp vinegar or lemon juice
2 Tbsp olive oil
1-2 cloves garlic crushed OR red onion sliced in salad
salt to taste
Pour over salad. Mix very well.
Use a variety of vinegars and choose one each day such as: red wine vinegar, balsamic vinegar, apple cider vinegar, lemon juice...
So yummy!

the spice and spirit cookbook (the purple one) has some great ones. I just made their french dressing over shabbos and it came out really good.

this is my friend's recipe, and I absolutely love it:
1/4 c oil
a little less then 1/4 c of vinegar
4 heaping spoons of sugar
4 heaping spoons of mayonaise
mix well, I usually use a blender, and let sit in the fridge for a few hours.
you can play around with the taste, more sweet, more vinegary... etc.

This one you need to mix in the food processor, but it is really yummy!
2 cloves garlic
½ c. ketchup
½ tsp salt
3/4 c. oil
½ c. vinegar
½ c. sugar
½ tsp paprika
½ tsp mustard
The veges it calls for:
spinach/romaine, cherry tomatoes, mango, avocado, alfalfa sprouts, snow peas, cucumber

I have a couple of great recipes:
This is for salad with the flat deli style pretzeles it's a great one!
½ Cup Oil
2 Tsp Soy Sauce
2 Tsp Vinegar
¼ Cup Splenda
1 Tsp Garlic
This one is also a great one can be used for a deli salad or grilled chicken salad. The first time I made it my husband and I were licking the bowl clean!
¼ Cup Honey
¼ Cup Oil
¼ Cup Sugar
¼ Cup Red Wine Vinegar
1 Tsp Wet Mustard
Pinch of Salt and Pepper
Here's one more:
2 Tsp Apple Cider Vinegar
¼ Cup Mayo
¼ Cup Honey
¼ Cup Oil
1 Tsp Dijon Mustard

This dressing is from OldYoung's Angel Hair Pasta Salad Recipe. It's great with lettuce salad!
1 c mayonnaise
1/2 c sugar
1/8 c vinegar
2 cloves of garlic, crushed
1/8 c water
dash of salt
dash of black pepper
1 T mustard

This is a great salad:
slice:
cucumber
zucchini
carrot
onion
radish (optional)
garlic
in a pot add:
1/2 cup oil
1/2 cup vinegar
1/2 cup water
sugar to taste
I alternate between using dill & basil/oregano, paprika, that sort of thing
bring to a boil. Pour over vegetables and let stand to marinate. Best if made ahead so vegetables can pickle.
Also great on a lettuce salad, I usually just spoon the pickled veggies onto the lettuce and get the dressing that way.

I just got this recipe and it has become our new favorite:
1/2 cup mayo - low fat
1/4 cup sugar
1/4 cup water
1/4 cup oil
1 1/2 tsp crushed garlic
1 tsp. lemon juice
1 Tbsp. yellow mustard
salt and pepper to taste
You can make this on any salad - lettuce, peppers, chich peas, carrots, sliced turkey - it goes well with everything!!

Can I use sugar instead of splenda? Do I need to adjust the amount?
