what do you have in your house? fancy, not fancy, healthy, hot, pasta, veggies what?

here's a veggie one:

salad leaves (spinach and red cabbage are good)
chopped pepper, tomato, mushroom, cucumber
shredded chicken
either an olive oil dressing OR a mayo-based

a nice mayo-based can be mixed with a little sesame teriyaki to give a zing.

a hot one:

sauteed veggies, chicken, spaghetti noodles with olive oil dressing

What I've done in the past is bake breasts or schnitzel in a honey mustard sauce.
cut them up when done and add whatever you want. I usually do lettuce, cucumbers, carrots, peppers, a small onion, hard boiled eggs.
I've also added croutons and deli in the past. Serve with a honey mustard dressing

I think I found it here actually. Don't know amounts since I just do it by look. But it's mayo plus a bit of honey and some mustard. possible a bit of lemon juice too.

I also googled a delicious honey mustard recipe once. and yes it's great on chicken salads. I think I got it from allrecipes.com. it had 5 stars.

I have a delicious one that has lettuce, red and yellow pepper strips, baby corn, bamboo shoots, scallions, and chow mein noodles... with a great dressing, and honey mustard chicken strips.

The dressing is:
• 4 tsp soy sauce
• 2 Tbsp oil
• ¼ cup vinegar
• ¼ cup sugar
• 4 cloves fresh garlic, pressed

If you want the exact amounts for the salad ingredients (you really don't need it, just eyeball it) or for the chicken marinade, let me know.

You can do any marinade, including just using honey mustard.
Here's the original, intended for 3 chicken cutlets.
It can be grilled/baked... any way you want, or you can use the directions.

• 1 tsp olive oil

Yum! That one sounds great!! Here's another, which my mother calls my "top secret" grilled chicken salad. Here it is, Mommy, if you happen to find this...

Marinade chicken in the following sauce I found on kosherinthkitch, and grill-

Equal parts soy sauce, and olive oil (4 tbsp.)
Equal parts lemon juice and brown sugar. (2 tbsp.)
2 cloves minced garlic
Black pepper
Basil

Serve chicken with lettuce and sauteed (but not limp! keep them a little crispy!) red and yellow pepper strips, and a red onion sliced thin

Dressing for salad-

1/4 c. dijon mustard
3 T. red wine vinegar
1 T. white wine vinegar
¼ t. salt
2 cloves crushed garlic
½ t. basil
⅛ t. black pepper
2 drops hot sauce
3/4 c. oil

This is from the Silver Spoon Cookbook btw.

Salad Ingredients
• 1 head of lettuce
• 1 red pepper, cut into thin strips
• 1 yellow pepper, cut into thin strips
• 1 can baby corn, sliced
• 1 box bamboo shoots
• ½ bunch scallions, sliced
• chow mein noodles

Dressing
• 4 tsp soy sauce
• 2 Tbsp oil
• ¼ cup vinegar
• ¼ cup sugar or 6 packets Sweet & Low
• 4 cloves fresh garlic, pressed

Combine salad ingredients.
Mix all dressing ingredients well. Pour over salad ½ an hour before serving.
Once chicken is cool, cut into strips. (chicken recipe above)
Toss salad with dressing and chicken.

Serving Suggestion:
Lay generous amount of chow mein noodles around rim of plate like a nest. Put salad in center. Lay 3 strips of chicken over salad and serve.
