Anyone know how to cook tongue???

I bought a tongue but I have no idea how to cook it - anyone??

I made it a couple of times. It's not my favorite!!! But, DH likes it, so, I just look the other way.... :-)

If I remember correctly, (My cookbook is put away 'till tomorrow night....)
You boil it in water for quite a long time.
And you add:
A bay leaf
Some cloves (what we use for Besamim by Havdalah)
and a couple of whole black pepper

After it's done, you kinda have to peel off the skin from the tongue, and then slice into thin slices.

The meat should be VERY tender.

I bought two raw tongues for Pesach. And made the following. It came out wonderfully!

Large pot. Scrub the tongue under water, put into pot. Add salt, pepper, whole garlic cloves (if you use it on Pesach). Add water (about 5 inches above the tongue). Cover the pot and let it boil for an hour. THen lower the temp and let it simmer until tender (insert a fork or knife).

Let it cool and then peel off the skin.

Ingredients for Virginia Beef Tongue

* 1 beef tongue, fresh
* 1 cup brown sugar
* 1 cup stewed cranberries (or one can whole cranberries or cranberry jelly)
* ¼ cup butter or fat (or oil)
* 1 tablespoon whole cloves
* ½ lemon

Instructions

Take one cup of the liquor in which the tongue was cooked and add the brown sugar, stewed cranberries, butter or other fat, cloves and lemon, sliced.
Simmer the tongue in this mixture for one-fourth hour.
Place on a dish with the sauce, garnish with slices of lemon and sprigs of parsley and serve.
Tongue may be jellied and served cold.

I just cooked it for four hours or so (?) in just plain old water, and it was wonderful.

you have to peel it after it's cooked which is grime-istic.

That's what I do, it is so easy, and it comes out delicious. My whole family really likes tongue.

Also I add a bit of vinegar to the water, makes it easier to peel, mine is cooling off as we speak.
