I make pancakes or waffles for lunch all the time, but I'm stuck for a side dish. DH is pretty picky....

can't be eggs
can't be fruit (he heats bananas, grapes, and apples, but "only if I'm in the mood")
can't be cottage cheese or yogurt
can't be vegetarian sausages
can't be israeli salad

I can't think of anything else!! he says make potatoes, but I feel kinda dumb using a starch as a side dish for a starchy main! help!

You can make hot cocoa or chocolate milk to have with it, and make a strawberry sauce with strawberries and sugar to have over it! Its not TECHNICALLY fruit. And why do you need a side dish anyway? Usually people scarf down enough pancakes or waffles to make them full.
Personally, my dh shies away from anything that sounds too healthy, so I have to make most things sound as unhealthy as possible (and disguise things such as brown rice with tomato sauce) Wink

Maybe pancakes or waffles is not a good fit for a meal for your dh.

I never heard of a side dish with these. We just make enormous stacks and provide butter, maple syrup, silan, etc to pour over them. The drink (milk, juice, cocoa and so on) is all you need

How about a Greek salad, Greek pasta salad, or Greek couscous salad (all with feta cheese.)

This might not work for your son, but I grew up with peas as a side dish for pancakes, and my kids love them Smile

Why not make your pancakes more filling by putting some fruit in them -- why should he need anything else?
