for another time:
fry onion, add the breasts along with soy sauce, a bit of live oil and some wine. (soy sauce and wine are good tenderizers as well as adding flavor; olive oil adds moisture that is generally missing from the breasts.)
much simpler than all the rolling and stuffing and quite tasty!

here is another recipe for another time.
put seasoned bread crumbs in a bowl.
coat pounded chicken breasts with the bread crumbs - no eggs
roll up the breaded chicken and line them up in a pan.
mix 1 cup mayo, 1 cup apricot jam and lots of diced garlic. pour over chicken. bake 45 min. uncovered. freezez really well - I make it for sheva brachos all the time.

Though I suppose your chicken hasn't been defrosting for a month, - this is very popular in my house. Bake or grill chicken breast cut in strips or larger pieces with:
SAUCE
1/3 cup honey
1/2 cup ketchup
3 Tablespoons soy sauce
3 Tablespoons lemon juice
garlic and ginger if you like
Add this to fresh garden salad with following dressing:
(only need to use some)
DRESSING
1cup oil
1/2 cup vinegar
1/2 cup sugar or splenda
1/2 cup vinegar
1/2 cup warm water
1/2 cup honey
2 teaspoons mustard
black pepper
(Sauce is great on wings, regular chicken and fish also)
