The title says it all. I'm defrosting frozen skinless chicken breast pieces which I'm hoping to cook Wednesday night. I need to finish all cooking by Wed night this week as I'll be out of town Thurs and won't be back till Fri pm (and still have guests for both dinner and lunch!).
Is it safe to keep poached chicken breast in the fridge for 2-3 days to serve for shabbat lunch? I prefer not to freeze and defrost as the chicken has been already frozen.
I would think it should be ok. My logic: I make my shnitzel/grilled chicken breast on Thursdays and we have leftovers for dinner on Sunday night too (3 days).
