Hi ladies.
I will iy"H be making supper for a family of 8 tomorrow night, and I'd like to add a soup to the menu.
Does anyone have any ideas for a soup recipe that is cheap and easy?

MOOSEWOOD SPLIT PEA (hopefully remembered correctly)
Rinse 3 cups dried split peas, and add to pot with 7 cups water with 2 tsp salt. Bring to a boil then simmer, about 20 minutes. Add 2 stalks chopped celery, diced carrots, one diced onion, one thinly sliced small potato, garlic, pepper. Simmer about 45 minutes (maybe longer). Add 3 T red wine vinegar. Serve.

I made a sweet potato and carrot soup with sauteed diced onions the other week (my butternut squash had gone bad), and I added in some frozen zucchini. It was really, really good.
I basically boiled it till mushy, pureed, added milk (you can add water, I wanted some calcium) and salted to taste.

I make split pea soup with just oniuons and carrots and it's really good.
Tomato soup: A can or jar of tomato juice, water, sugar, salt, rice. Cook until rice is soft.

miso soup is pretty easy. I dunno how cheap though.
mushroom barley soup, also pretty easy. onions, garlic, carrots, mushrooms, and barley.
Zucchini soup- onion, zucchini, oregano.
Corn soup- onion, corn, a little water or milk, possibly cheese. blend.

Yes, that does seem to be the cheapest, and a well know winner. You grate the carrot and chop the onions and stir fry until translucent. Then, add the mushroom and barley and water, salt and pepper to taste. Cook until the barley is soft. With freezing, I found that I turns to glue… best when eaten fresh.

2 c water
1/3 rice
slat papper
bring to boil then simmer 20 min
done
soooo ez
serves 4

Here's mine! I make it every week.
Soak 3/4 cup of navy beans overnight.
Sautee LARGE onion in 2T olive oil
Add:
beans, thinly sliced 1/2 rounds of green & yellow squash, mushrooms, carrots, 2 whole parsnips (which I pull out after an hour or so), 2 cans tomato sauce, water, garlic powder, 2 sachets of Splenda, S&P, thinly sliced cabbage, italian seasoning (optional).
Boil & then simmer for 4 hours or so until beans are soft. You may have to add more liquid.
VERY IMPORTANT: add pareve chicken soup mix (2 T or so), it brings out the flavor. I keep it in the fridge until it's gone.

when u say every nite do u mean even in the summer. I feel so funny serving hot soup in the summer! do you do that? I would say bubby knows best so if you say yes there may be some reform around here.

I shlepped a big pot of partly-boiled soup to DD's yesterday & finished it there (I was bubbysitting my grandchildren.) All the grownups had it for supper!
I'll have soup every night, no matter how hot it is outside. It's a healthy filler & this recipe isn't fattening (no potatoes!) I count it as 3 points WW for those who care

Bubby what size tomato sauce do you use and how much squash do you use as I'd love to try this for the 9 days it sounds yummy and healthy!

Vegetable Barley Soup
Don't have exact measurements
Split peas
Red lentils
barley
1-2 onions
2-3 cloves of garlic, minced
3 carrots sliced
2-3 stalks of celery
2 zuchinnis
2 or more yukon gold potatoes (I usually leave them out)
Dried dill
Dried parsley
Saute onion and garlic in oil until slightly brown. Add water, add rest of the ingredients bring to a boil and simmer for a an hour or two. Mix every so often.
