My dh hates dark meat chicken. I usually make all the leftovers go with different methods (stir fries, I put it in chili and my daughter eats it). I want a new idea. Any ideas?
I happen to have half a sweet potato and a cup of ww pasta in the fridge would love to use that as well. More important is the chicken though.

Chicken and rice--our usual afterlife for leftover chicken.
1. Wash 2 cups rice changing water once or twice to get rid of starch, soak for 20-30min
2. Cut up the meat in small cubes/pieces. Sautee chopped onion (1/2 to 1) till transparent.
3. Boil 2.5cups water with 1/2cup tomato sauce (pasta sauce or pizza sauce will do), a teasp of parve
soup powder, salt & pepper.
You can add leftover bony carcases, gravy or burnt bits in the pan for extra flavour.
4. Add rice and chicken, cook covered for 15-20min (follow direction). Turn off heat and let it steam for
additional 5 min. You can add frozen peas for the last 5 min.

Thank you. I ended up taking some pumpernickel pita I had made tomato sauce and spiced it well I cut up the chicken and baked it till toasty he loved it.

you can make a chicken salad sandwich.

A little late but next time you can take the chicken and chop it up add it to sauted fresh or frozen peppers and onion canned or fresh mushrooms and than add a can of tomato sauce or marinara sauce whatever you preffer and serve it over pasta or rice.
