We love this salad, & it's perfect for shabbos lunch.

Grilled Chicken Breast Salad

Marinate chicken breasts:
1/2 cup honey
1/4 cup soy sauce
4 T. brown sugar
1 clove garlic, crushed
1/4 cup ketchup

Cut each chicken cutlet into 3 or 4 strips. Combine above ingredients & pour over chicken cutlets. Refrigerate several hours or overnight, if you have the time. Grill or bake chicken breasts (I always bake them, covered with aluminum foil, at 350 degrees for about 1/2 hour-40 minutes. I bake them in the marinade.) When the chicken is cool, cut into strips.

Salad Dressing:
1/2 cup low fat mayo
1 tsp. garlic powder
few shakes black pepper
3-4 T. water

Salad:
romaine lettuce
craisins
grape tomatoes

Mix salad with dressing and top with the chicken.

It's really not much of a recipe LOL... I bought flattened chicken breast (they're thinner and have a larger surface area) and a package of 'Romanian' beef kebabs which I defrosted.

I wrapped the chicken around the kebab, securing with a toothpick at each end.

I dipped it in egg, mixed with oil, paprika, garlic powder and black pepper, then carefully rolled it in breadcrumbs.

I placed it on an oiled cookie sheet and baked it at 325F for 12 minutes or so, then turned them over and baked for another 10 minutes.

In winter when we don't have chont I do a chicken and barley dish.
Marinate chicken in whatever seasoning you like (I usually do the regular, ketchup, soy souce, brown sugar and garlic - but anything goes).
slice two onions into rings and place on bottom of baking dish.
add barely
season (salt, pepper, paprika, garlic, cummin - or whatever seasoning you like)
add liquid (2.5 cups of liquid to 1 cup of barely)
do about 2/3 water one third white wine
place chicken on top of barely
cover the dish
bake for about an hour and then uncover and bake for another half hour.
If I'm serving this dish shabbat day I'll bake covered until it's done so the chicken doesn't dry out in the oven and stays moist even on the plata.
Obviuosly you can replace barely with brown rice, white rice, other grains, even orzo. Also you can add sliced potatoes, sweet potatoes and anything else you like.

Honey mustard Schnitzel
1/3 cup honey
1/3 cup dijon mustard
2 tbsp lemon juice

Dip schnitzel in above mixture then into breadcrumbs.
drizzle with oil and bake uncovered for 20-25 min

Easy, healthy, and goes fine cold.

cold:
Coronation chicken (search for thread I've posted not so long ago)
Sesame soy chicken salad (similar to sesame noodle salad, toss chunks of cooked chicken breast pieces in tehini and soya dressing with chopped salad onions and chopped red peppers)

hot:
Tebeet (basically chicken cholent with rice, If you have a large crowd you can use a whole chicken and stuff with meat and rice)
Chicken with crispy potatoes (basically a roast chicken, except it sits on a single layer of sliced potatoes which turn crispy during the baking)

Chicken sesame noodles are a hit here:

either grilled chicken breasts, sliced into strips or leftover chicken from the night before, deboned and cut into pieces
1 bag spaghetti, boiled and drained
1 bunch scallions, chopped
sesame seeds

1/2 c. oil
1/2 c. sugar
1/2 c. soy sauce
dash or two of sesame oil

I had a guest before R"H who came a few hours before and made the chicken for me. It was absolutely delicious! He sauteed onions, spinach (the frozen type), added some soy sauce and I think a little bit of sweet and sour sauce. Then he cut a pocket in each piece of chicken and stuffed the mixture into it; sprinkled the top with parsley and baked half covered, half uncovered.
It was really good!

I have a few

Oven baked sesame chicken (from the Kosher Pallete)
combine 4 TBSP flour (I use Whole wheat)
6 TBSP sesame seeds
1/2 tsp pepper

dip chicken (any kind) into soy sauce, and then into sesame/flour mixture. Drizzle with some oil. Bake (time will vary abt 45 m-hr for bones less for cutlets)

Pesto chicken.

Make pesto (basil, pine nuts, garlic, salt, olive oil pulse in blender) rub into chicken, bake

with both of the above, can be either served warm or cold. If rewarming, make sure you remove the oil from the bottom of the pan

Thai peanut butter chicken
1/2 c. sesame oil
1/4 c peanut butter
1/4 c soy sauce
3 TBSP red wine
2 cloves of garlic crushed (I use 2 tsp of the already crushed)
1/2 tsp crushed red pepper.

combine ingredients, marinate the chicken overnight. Bake (I serve room temp on shabbos. I find this better with cutlets)

I also sometimes make a meat (well really chicken) pie

I sort of make it up each time, you you might be better off searching for a recipe

pastrami-chicken roll ups--

pound chicken breasts flat, and spread with honey mustard. Place a piece of pastrami over mustard. Roll up cutlet and secure with toothpick. Dip rolled up chicken into beaten egg, and then into spiced cornflake crumbs (I use onion powder, garlic powder, salt, and pepper). Remove toothpick and place chicken on a greased pan, seam down. Bake at 350 for 45 minutes, uncovered.

chicken potatoe salad ...

dice up into small pieces cooked chicken and cooked potatoes ... add scallions, non-irradiated hot cayenne pepper, garlic powder, black pepper, chilli powder, sea salt, a little olive oil ... and a garlic dill pickle ...

don't forget the beer

the one in the dough I'll try to post it later or tomorrow.
Chicken capon has loads of stuffing recipes-I made mashed potatoes with fried onions & pastrami but you can also stuff it with bought Kishka or rice with mushrooms or orzo with sauteed vegetables. then you pour duck sauce or bbq sauce bake on 350 for 2.5 hrs...
