I am looking for a recipe for Cream of Potato Soup that is pareve and freezes well. If anybody has a recipe it will be greatly appreciated.

I don't think it's officially a "cream of...." soup however the potato soup in the lubavitch purple cookbook is fast and easy. AND OH, SO GOOD!

saute onions in alot of oil and when browned add flour so the mixture becomes thick.
in a pot boil up potatoes. when the potatoes are soft add the onion mixture and some spices. using an immersion blender, blend it up.
I think the amounts are s/t like 6 potatoes to one onion to 3 tbsp flour. but I havent made such a small soup in a while.
o dont know how well it freezes

I make a cream of potato/squash soup.
it is yum an deasy!!!
take a couple large onions and dice then saute them
cut up potato and zuchinie into small diced peices (I use a bit more potato then zuchinie)
add to sauteing onions add salt a drop of peper and a bunch of garlic saute a bigt longer then add just enough water to cover the veggies and cook till all is soft then blend! dont forget to stir from time to time so it dosent burn.

Squash Soup:
3 large squash (zucchini)
1 fresh onion
2 large potatoes
1 fresh garlic, minced
salt & spices (I use pepper)
In a large pot, saute onion and garlic. Cut zucchini potatoes into chuncks; add to pot and cover with water. Add salt and spices. Cook over medium heat for 25 minutes. When done, puree with hand blender.
I usually leave out the potatoes.
