Never see anyone do it but I have a fry daddy and it's filled with oil from making donuts. It will save me making another pot dirty

The latkes are unlikely to retain their integrity. In a frying pan, the bottom of the pan supports their shape until they cook enough to solidify. Swimming in oil, there's nothing to hold them together and you'll end up with "latke-drop soup."

I would do it with frozen latkes. I think for fresh you have the issue that zaq said.

Since you have the oil, I would strain it and use it to make Orange Chicken 😂😂

Ok so I tried it before reading your responses and it disintegrated and I got potatoe sticks. So I made another pan dirty!
