Not asking about which deli meats you put in, just what do you out in WITH the deli meats, to give it flavor?

I put a layer of mayo and mustard before laying out the deli. I once had one that was brushed with a honey glaze before baking and it was DIVINE, but I've never been able to replicate it exactly the way she did it. Also an extra touch is to sprinkle with sesame seeds before baking. You might want to serve with chili matok sauce on the side for dipping.

I mix approximately equal parts ketchup and mustard. I then add sweet chilli sauce, not sure how much but less than a 1:1 ratio. I spread this mixture on the pastry, layer the deli and roll it up.
Ok, I just realized that I misread the question....I don't really put a thing out with it, the suaces inside seem to do the trick for us. I also like to sprinkle sesame seeds on the roll

I forgot to mention that we have a lethal allergy to mustard over here, so no mustard for us, but the sweet chili sounds like a very nice idea. Thanks.

Russian dressing- mayo, ketchup, and some bbq sauce (I usually add mustard also, but you mentioned the allergy)

Mayo on the dough, bbq sauce and sauteed onions on the deli, and duck sauce instead of an egg wash.

I don't put anything inside, but instead of egging the top, I put a thin layer of duck sauce. It adds sweetness and makes it tastes so good.

I use either duck sauce or BBQ sauce, or honey mustard. But what really gives it flavor is a slow-carmelized chopped onion that I spread on.

I've never made a deli roll in my life, but I think a creamy horseradish sauce would be amazing.
