No. It holds together better with the skin. It’s delicious. And the skin has health benefits that are lost when peeled.

Mg soup cooks for 6-8 hours and the peeled zucchini hold together just fine

I always peel it. I think I'll try next week not too. I love zucchini btw. Will see if I'll mind the peel.

Peeled- the zucchini falls apart
Not peeled- gives the soup a darker greener color, but it holds together better.
I don’t peel them
