Fake Pot Roast Meat Loaf
from another board, with my changes
Meat loaf:
2 lbs chopped meat
2/3 bread crumbs or similar
1/2 cup ketchup
1 T - or more - BBQ sauce, to taste
pepper to taste
Vegetables:
4 potatoes, peeled and sliced
6 med onions
4 med carrots
Shape the meat into a free standing meat loaf and put into greased roaster surrounded by vegetables.
Cover and bake at 375 for an hour or until vegetables are tender. Remove foil and bake for 10 minutes longer.
