Anyone have recipe for crockpot onion soup that can work for shabbos day

Haven't tried something like this in the crockpot, or cooking all shabbos, but if you want to try I would probably sauté 4 sliced large onions until caramelized to a nice golden brown, stirring frequently so they don't burn.
Add 2 splashes balsamic vinegar and continue to sauté.
Slowly stir in maybe 2 tbsp flour.
Stirring to keep lumps from forming, add maybe 8 cups water. Add 2 bay leaves and season with salt and pepper to taste.
Bring to a boil over high heat. Taste one more time. Transfer to crockpot, and set to low.
It will get very strong cooking so long; keep that in mind.
