I made challah dough yesterday and I stuck it in the fridge last night I took it out now to braid it and it has an apple juice smell is it still good

Sorry. That has happened to me before. It's the yeast fermenting if the smell is not so strong I would bake it anyhow and make lots of flavorful dips. But chances are it's no good
