Anyone have a recipe for a sweet matza brie? I don't need exact measurements just need to know approx. what goes into the making of a matza brie...thank you!

2 pieces of board matzah (for shmura I'd eyeball the equivalent, maybe 1.5 pieces?)
1 egg, slightly beaten
for frying: I use nonstick spray or 1-2 tsp of oil to be healthy, but it's the best when fried in butter
break up matzah into pieces and put into a bowl. soak it in warm water until it is soft, but not a total muchy mess. drain. mix in the egg. fry on a low flame until each side is nice and crispy. top with sugar, cut up fruit, whatever.
might be nice to add some vanilla to the mixture too before frying.
this recipe is for one portion. I found it comes out best one at a time, but you could experiment with doubling.

I use 1 egg per 1 square matzoh. no soaking of the matzoh. just break up into small pieces over egg, mix well, fry. add sugar, jam, syrup and enjoy.
