Someone told me that but if it’s true why do they sell specifically whole wheat one.

No, of course not, you can see a clear color difference between the regular and the whole wheat.

No. Whole wheat is more difficult to knead. Most shmurah matzah is not whole wheat.

In addition to white and whole wheat you can also purchase spelt or oat

No. The whole wheat boxes from each bakery is clearly marked (and the price reflects that).

Ask your rabbi about spelt and oat. Unless you have health issues that make you unable to safely eat wheat, it’s better not to eat those. It’s questionable if you’re yotzei the mitzva at the seder with spelt or oat. They’re for people who for medical reasons must be gluten free but not for people for whom it’s a preference.
