why do my cookies spread flat in the oven?
it hasnt got too much fat and I refrigerated over night.
can it be beating eggs too long (before adding the flour)?
or can it be overmixing the flour (its got alot of flour and I leave mixer on low whilst adding flour but it takes time and maybe its mixing too much?)

Not sure what is happening but when I make cookies I place all ingredeints in to the bowl and then mix together, it takes minutes to combine.

Do they have oil instead of margarine? That's likely why. It's not necessarily a bad thing.

it doesnt always happen.
thats why I know its not the recipe.
the recipe says first beat eggs oil sugar then add flour.

Youtuber 'how to cook that' did a video on it.
If I remember correctly it's to do with freshness of baking Powder and the humidity etc.
Could be im mixing things up but have a look what she said

Roll them into tight balls so they start off high and round and space them 2 inches apart. This way they will spread less since they started off high and small. Or if you have a cookie scoop that is even better. Pack tightly and scoop out all in the same, and they will all be perfectly even (and scoop also has the desired height).

You measure ingredients properly, right? Same egg size every time?
Oven pre-heated and temp correct?

Same recipe but different results, is that what's you mean?
You shouldn't form the cookies on a hot cookie sheet.
Do you store baking powder/soda in a small tightly closed in a dry container? (Hot and humid climate can have a negative impact)
Expired baking soda/powder?
Do you keep track of the mixing time or once it's 3 minutes and the next time 30 minutes (cause aunt Miriam insisted to speak to you on the phone for half an hour).
Is your oven working properly or it's a gamble every time your switch it on?
