If you roasted potatoes today for YT, would you freeze? Leave in fridge for several days? I would love to get my potatoes started but didn't think they would freeze well and feel like it's too many days ahead to leave in fridge.

I think most potato dishes are better fresh. I'd skip them and focus on doing what you can that does freeze well.

No I would not freeze roasted potatoes. Out of the list I would only freeze knish. Recipe from new overtime cook cookbook. Google to see if it's online.
