My sister offered extra veggies. She got from a pesach package. I asked for onions and sweet potatoes. She gave me about 40 lbs of each!!!!! I usually use like one or two a week. Would love to make something with them, even one pound lol. Made onion soup yesterday. Please share recipes !!!!

Make caramelized onions - you can do it in a crock pot or the old fashioned way. It freezes well.
Make sweet potato fries in the oven.
