How do I make cheese blintzes

So I think I will attempt homemade cheese blintzes this year. After I fill the crepe leaves with the cheese mixture, do they need to be pan-fried again? Or, if I fill them, and freeze them, just defrost and serve??

I've frozen them filled, without refrying and they've defrosted fine. I use this recipe from betweencarpools and it's delicious.

That's the one I want to try!

So are they are served cold or room temp? I feel like the recipe isn't super clear...

I think it's usually more cold than room temp, but it's the sort of recipe that works for either. I usually end up with a lot more filling than blintzes and use a graham pie crust to bake a cheesecake with the leftover filling.
