I don't like it, but chuck roast is the cheapest roast you can get, there are a lot of easy recipes, and many people do like it.

My easiest go to is flanken or club steak spiced and wrapped well in silver foil, slow cooked in the crockpot above the chulent for couple hours.
No extra flames or oven. It becomes soft as butter and like sou vide.

Sometimes I take sliced shank meat
And bake it with lots of onions, salt, pepper, garlic powder
Cook low and slow
It’s easy because it’s already sliced
Like minute steak but no vein

Does it have to be part of the main dish? I often put stew meat or meat bones in soup, but then I almost never make plain chicken soup.
Pepper steak
Meatloaf
Meatballs
Sausages and peppers
Stir fry

Just curious, what constitutes inexpensive meat?
Some of the items listed are relatively inexpensive, but others are $17/lb. is it just my neighborhood prices or do I have a warped sense of what constitutes cheap?

Depends where you live and if you shop sales. Shank meat (kolichel) can be purchased for 5.99/lb in Brooklyn. Chuck roast for 6.99. London broil 7.99, same for different cuts of pickled corned beef. Boneless flanken 9.99... I think the only thing I saw here that costs more is oyster steak.
Rib steak, rib roast, Delmonico chuck, club steak, minute steak and minute roast are also cuts for $10/lb and under.

So I don’t usually use any specific recipe. I either do a spice rub like the Trader Joe’s coffee rub with olive oil or a basic marinade like balsamic vinegar, olive oil, mustard, rosemary, salt and pepper. Broil or grill between 10-20 min, depending on the size of the meat and desired doneness. Serve sliced. I serve at room temp because it will get overdone if reheated in the oven.
