I had a recipe for matza balls that made delicious, fluffy matza balls. It used seltzer and about 4 or 5 eggs and they were the fluffiest best matza balls which I made all year.
Unfortunately, I put my recipes away with my chometz stuff and dont have it.
I found this recipe online back when but cant find it again now...
Anyone else have a good recipe, that includes seltzer?

In case you are still looking for a yummy recipe Seraph:
Matza Balls
• 1 cup matza meal
• 4 eggs, lightly beaten
• 1/4 cup seltzer
• 1/4 cup oil
• 1 tsp salt
• dash pepper
• garlic powder (optional)
Mix everything well. Chill in refrigerator for 30 minutes.
Make hands wet. Form balls. Drop into a pot of boiling water. Boil for 35 minutes.
For extra fluffy matzah balls, keep the lid closed and use a wide pot so that they have room to expand.
