Ground beef is great, you can do so much with it.
Shepherd's pie
hamburgers
tacos
burritos
meatloaf
spaghetti and meatballs/meatsauce
sweet and sour meatballs
meatball minestrone soup
meat lasagna
meat bourekas

Is this what we Brits call minced meat?
If so, I use it every week in various incarnations:
-meatloaf
-meatballs
-shepherd's pie
-beefburgers
and a few others over the years which I can't think of right now

Shipwreck:
2 med onions chopped
3 med potatoes, sliced
1/2 to 3/4 lb ground beef (I use 1 to 2 lbs)
1 c cooked rice
1/2 c chopped celery
1 15 oz can kidney beans, drained
salt and pepper
2 cans tomato soup
1 soup can water
Layer onions, potatoes, meat, rice, celery, beans in pan, seasongin each layer. Pour soup diulted with water over each layer. Cover, bake at 350 degrees for 2 hours or until potatoes are done.
Note: I always make this in the crockpot. I use more water than the recipe calls for, and cook on high for about 4 - 6 hours.

My MIL made a great meatloaf last week - she stuffed it with mashed sweet potatoes. It was delicious!

Ground turkey is also great for all those recipes and I've heard it's much healthier than ground beef.

Ummm. . . I want the recipe as well, but that requires being on the phone with my MIL for a loooong time (she's a big talker and it'll take forever just to get the recipe). When I get the courage to ask, I'll post it.
I would just use a basic meatloaf recipe and put mashed potatoes inside before rolling it up.

This is what I did last week. My father had a diced onion in my fridge. And they bought ground beef, which I almost never buy, but had to use it, b4 it goes bad. I sauted the onion in a drop on oil. Put in the ground beef, and with a spatula, I browned the meat in the onion. When it looked almost done, I added a half a bottle of marinara sauce I had in my fridge, and voila, my dad says it was delicious.
