Hi All,
I have some leftover eggplant dip from shabbos (roasted eggplant, garlic, lemon juice, oil - NO MAYO).
Was looking for some creative way to use it...
Maybe in a chicken recipe? Or a vegetable side dish?
Any ideas?

Add techina (paste) and use to dress an Israeli salad. I really like that! You can lso freeze it for another week.

Do you have a sandwich maker? I take two slices of bread, muenster cheese in the middle, and spread with eggplant dip. toast in sandwich maker. Yum....tastes like a calzone or pannini.....

Make a roasted eggplant and tomato soup or use as a spread on a grilled veggie wrap or in a grilled chicken baguette.
