I made this recipe or the first time this summer. It has been such a great hit that I had to share it here:
Velvet chicken:
1 onion
1 clove garlic
1 green pepper
1 stalk celery
1 carrot
1 zucchini
1/4 cup sugar
1/4 cup soy sauce
1 tsp salt
1/2 cup wine or water (I've used both-either is fine)
4 chicken cutlets-cut into strips or cubes
1/2 cup water
1/4 cup cornstarch
Cut, slice, or dice all veggies. sautee. combine sugar, soy sauce, salt and the 1/2 cup wine or water. pour over veggies. Add the chicken. Cook-stirring often until chicken no longer pink.
mix cornstarch with water, add a bit of the sauce. stir till blended. pour over chicken and veggies. Heat until sauce thickens.
Note: You can use any veggies you like, and as much as you like _I mix and match according to what is in the fridge.
