I'm looking for a healthy sweet potato soup if anyone has any suggestions (DH bought a box of yams on sale last week and they are still sitting around...)

I usually just sautee a couple of onions, add some sea salt to them when they start to soften, then add water or rice milk- or a combo of both. Once you bring the water to a boil, add cubed sweet potatoes and then let them simmer until soft. Then blend with immersion blender.
My neighbor flavors his sweet potato soup with a turkey wing,fresh dill, and ginger. It's incredibly delicious.

Would you add splenda or sweetener? Is the soup you just described sweet or savory? either way, it sounds YUMMY.

I don't add any sweetener. It's savory, not sweet (besides the sweetness of the potatoes).

It sounds delicious. I'm just bad at figuring out the measurements by myself. All the recipes that I've seen call for chicken soup or vegetable broth. Does it need it to add flavor?

Sometimes I add chicken broth, sometimes I don't. It really depends how it tastes.

I sautteed 2 large onions, 2 carrots, 3 cloves diced garlic for a long time.
Added 7 sweet potatoes and 6 cups water (I used some soy milk only because I had an open box I wanted to use up).
It is very sweet and has a lot of flavor. It definetly does not need soup flavor. But I'm wondering if it could use something else.
I guess I'll see what dh thinks when he gets home.

Add salt and pepper to make it savory with a hint of sweetness. Yum.

thanks ra_mom. I just did. I saw Defy Gravity said to put in Salt when sauteeing the onions - but I was afraid to put in too much and didn't put any in.
I like it - so if dh doesn't - then it is just more for me

You definitely need salt! Salt is the most important spice, it helps bring out all the flavors. I always put sea salt in all my food. I usually put in pepper also.

I like to add a celery stalk with the veggies. I add salt, pepper, and cinnamon.
You can also add in a potato or two to make more soup, or anything else you fancy...

I sautee onions carrots & sweet potato, add water, salt & pepper & let cook till soft. then I blend it & add some garlic croutons or basil for decoration.
YUM!
