ISO : chicken and potato recipe - one pan

Hi! Im looking for a yummy chicken and potato recipe that can all go into one pan in the oven. Any ideas?

just throw em in together ...

cut potatoes under the chicken, put olive oil, black pepper, garlic powder, paprika some rosemary and bake ...

This is a standard, simple one.
Slice some onion, place in pan. Cut up (cube or slice) potatoes, place in pan. salt lightly. Place chicken over the potatoes and onions.
Spice chicken with pepper, salt, paprika, Mrs. Dash, whatever. Cover and bake. Uncover at end to brown the chicken. It is really yummy. One of my favorites!

Cube potatoes at the bottom of the pan, put the chicken on top.

Sprinkle with spices of your choice (Paprika, Garlic powder, etc.)
Dump Duck Sauce on top.

Bake at 350 until it's finished (An hour?)
Potatoes cook slower then chicken so I would boil it or microwave it a bit first. Or remove the chicken when it's finished and have the potatoes bake some more on their own.

This dish is hardly gourmet but it's fast and tasty.

I put some water on the bottom of the pan (maybe 1 inch?) that way the potatoes cook faster and you dont need to cook them separately. you can also add zucchini/mushrooms/carrots to the potatoes under the chicken.

if you cover the chicken it taste boiled ... if anything cover it at the end ...

a really yummy one is fry some onions with brown sugar.
then add the chicken.
I then put the potatoes under the chicken and add a drop of water.

I cook the potatoes in the pan first and then put the chicken on top. Even when I add water, the potatoes are never cooked.

Thanks for all the ideas... one question though.... if I were to cook the chicken uncovered, wouldn't everything dry out?

I cook it covered and then uncover it at at the end. I assume you're not asking about chicken cutlets.

I put enough water to cover the potatoes but not the chicken. I put enough sauce so the chicken has some taste (not just salt/pepper etc) and then bake it covered the whole time. I don't find that chicken tastes "boiled" or otherwise bland. It's yummy and juicy. When I bake it uncovered it comes out too dry.

I add a little olive oil ... the chicken has natural juices ... I've never had a problem ... bake at 350 for about 1 1/2 to 2 hours ... baste with gravies every so often if you'd like to make sure ... .. you can poke the potatoes and cover about 2/3 of the way if you wish

When my kids were younger, I made a dish that was really interesting and yummy. Chicken and potato cubes in the pan, cover with a bit of oil, salt, black pepper, flour, and orange juice. It thickens into a gravy and it's sweet and spicy.

as long as your kids will eat the potatoes if it has some accidental cross contamination (crumbs on potatoes, LOL) then by all means, go for it.

I do the same thing but I leave it in on low flame all day!

Thinking of putting in the potatoes first for an hour with onions, to give them a head start, and then putting the chicken on. Crumbs is not much of a contamination - I'll tell them that's the recipe - that the potatoes are SUPPOSED to have crumbs on them for flavor. That should work!
