1 T olive oil
6 bone-in chicken thighs (I used 2 tops & 2 bottoms cut in half)
1 potato, peeled & chopped
2 carrots, chopped
1 onion, diced (1 cup)
2 cloves of garlic, crushed
3/4 c white wine (I used Kedem Cooking Sherry)
1 c chicken broth
thyme
juice of 1 lemon
1/2 t salt
black pepper
1 tomato, chopped (I left this out)
1. Heat oil in large skillet over medium heat. Add chicken & brown on both sides. Remove from pan. Add potato, carrots & onion to pan. Cook for 5 minutes
2. Return chicken to pan with its juices. Add garlic, wine, broth, lemon, salt & pepper. Cover & simmer 15-20 minutes (I did a lot longer. I like my chicken really soft & the veggies weren't cooked enough) Add chopped tomato & serve.
