Pretty much the basic... Flatten the schnitzel as thin and evenly as possible (I usually slice skinless/boneless chicken breast pieces, cover with a clingfilm and flatten them with a rolling pin). Then I marinate in italian dressing, dip in a beaten egg, roll crumbs.
For baked schnitzel, I line shallow foil pan with waxed paper, spray oil both under and over then bake at fairly high oven like 180C.

Beat an egg with oil and your seasoning (my standard is garlic powder, black pepper, cumin and paprika).
Breadcrumbs go on a plate.
Dip flattened chicken breasts (I buy them already thin, they're the same price as the just off the bone breasts) into the egg, coating both sides. Dredge in the bread crumbs and then place on a well oiled cookie sheet.
Bake for 10 minutes on each side (or bake a little longer on the second side if you like it crispier).

Preheat oven to 400 degrees.
Mix 1 cup corn flake crumbs, 2 tsp flour, 1 tsp sugar, 1/2 tsp salt, garlic powder, paprika, onion powder and 1/4 tsp oregano.
Dip flattened cutlets in crumb mixture. (moisten cutlet with a bit of water first)
Place on greased baking sheet.
Drizzle with a little honey (if you like a bit of sweetness.)
Bake for 25 minutes, or until done.

Oh, and if you can find it, I highly recommend trying Panko Bread Crumbs. It makes a much crunchier crust.

Bake breaded chicken cutlets for about an hour & then add ducksuace & fried onions - bake again for about a half hour.

marinate cutlets in equal amounts of soy sauce, honey and oil.
Bread with flavored corn flake crumbs.
Bake on 350, covered, for 20 min and then uncovered for another 10-15.

Dip into mayo on each side & then in corn flake crumbs.
Bake on each side 20 minutes or until it is ready(every oven is different)

I dip themin mayo and then a combination of crumbled potato chips and bread crumbs - I find it makes them crunchier, which my kids prefer.

the best way to make bread crumbs for shnitzel or any dish is to put frozen or old challah in the food processor and use those crumbs...yum!
also, regular recipes for dipping shnitzel into eggs and then crumbs bakes just as well as frying if place oil in bottom of pan! its moist and tasty!

I don't even use eggs. The chicken is usually wet anyway and the crumbs just stick. I use plain or flavoured crumbs and bake on 400 for 45 mins.
