Fresh cherry soup

2kg fresh cherries
2.5 cups water
1 cup white or rose wine
1 stick cinnamon (or about 1tsp ground cinnamon)
1 tbsp corn flour
1/2 cup sugar
juice of 1 lemon

1. Remove stems and pit cherries. This is the most labour intensive bit.
You'll get about 2/3 of weight in actual fruits.

2. In a large pot, add cherries, water, wine and cinnamon. Cook for 20min or so
till the fruit gets soft. Dissolve corn flour with 2tbsp cold water, add to the soup
and cook another 5min till the mixture thickens slightly.

3. Add sugar and lemon juice to taste (both amounts depend on how sweet/tart cherries are).
Puree once cooled.

Enough to serve about 8.
Best served cold, drop of yogurt/creme fraiche optional.

You can use frozen cherries or UNSWEETENED canned cherries (but NOT cherry pie mix).
You can also use other fruits--purple plums, fruits of forests mix, strawberries etc.

Hmmm... This looks sorta familiar. I think my GGmother used to make this... Is it a Hungarian recipe? It was DELICIOUS if I recall...

Yup. You guessed it right--it's Hungarian.
